Slow Cooker Parsnip Soup


As a busy full time working mummy-to-be who just so happens to be completely refurbishing her whole house ahead of baby's arrival, I have no choice but to have my motto for cooking as, "throw it all in the slow cooker!"

We've just had our first flurry of snow and I was desperate to get into the Christmas spirit so rustled up a delicious festive parsnip soup... courtesy of the slow cooker of course. See my full recipe below. Try it, I know you'll love it just as much as we did!

Ingredients
- 3 large parsnips - cubed
- 1 onion - chopped
- 3 garlic cloves - chopped
- 2 table spoons of olive oil
- 1 table spoon of honey
- 2 table spoons of chilli powder
- 3 vegetable stock cubes with 1,200ml of water
- Fresh thyme
- 1 table spoon of cinnamon
- Salt & pepper


Method
- Pop it all in the slow cooker, topping it with 3 branches of thyme and a sprinkling of cinnamon for a festive twist.
- Cook on low for 8 hours.
- Remove the thyme and then mash it up with a potato masher. Alternatively for a completely smooth soup, use a hand blender.
- Cook on high for a further 30 minutes.
- Season with salt and pepper and serve... yummy!
